ROLLIN IN DOUGH

GOLD BEACH - For three years, Jim andquot;Jimmyandquot; Dickerson kept asking the question about purchasing Rollin' In Dough Bakery andamp; Bistro.

Finally, Chef Patti Joyce relented and handed him keys to the business and Dickerson immediately went to work to revamp the restaurant's interior with the colors, charm and character of a French countryside.

andquot;I contemplated retirement, but my customers continue to inspire me,andquot; Joyce said about remaining the chef at the eatery. andquot;Cooking is my greatest pleasure. It comes from the heart. So, after being in operation for seven years, I felt it was time to breathe new life into the business, and I trusted Jimmy.andquot;

Dickerson recruited his friend Kelli Ryan to help him.

He graduated from of the Art Institute of Fort Lauderdale. She is an accomplished painter and known for her restorative work at international museums and The Vatican. Together, they set out to create a banquet for the eyes - a compliment to Joyce's feast for the palate.

No detail was overlooked. Counters, shelves and the pastry display case all received a quaint Provence-inspired makeover. Chair pads were recovered with toile (French: cloth) - a fabric of white or beige background adorned with repeating pictures, usually a scene. The bathroom dcor became its own version of Claude Monet's andquot;The Water Lily Pondandquot;.

Across the walls, several inspiring French quotations appeared. There are Italian ones too to reflect Joyce's family heritage. Lastly, Chef Patti's collection of gifts - received from grateful patrons - was carefully arranged throughout.

In addition to the restaurant's new look, Joyce updated her menu to reflect customer input and changing habits toward lighter eating. She continues to utilize organic and Oregon products whenever possible.
