Brookings’s First Rise Baking Co. has a new location in downtown Brookings with an atmosphere that matches its bagels, breads and sandwiches.
“This last month has been amazing; we have more traffic and better visibility, which has increased our business six times over,” said owner Coreen McKinney.
The bakery opened its doors in June at 630 Fleet Street.
McKinney baked her first chocolate cake at age 3 for her brother’s first birthday, launching a lifelong passion for baking.
Decades later, after moving to Brookings, McKinney spent two years baking for restaurant from her home commercial kitchen.
She also sold baked goods at a local farmers market during the summer of 2014. In 2015, she opened her first bakery on Brookings’ Railroad Street and this year, relocated to the larger, more visible location on Fleet Street.
“I’m making and baking so much more and trying different stuff,” she said. “I’m interested in what the community wants and trying to meet everyone’s requests. I’m having such a fun time!”
Getting the new location up and running was a family and community effort. McKinney had help from her husband, parents and the younger brother, whose birthday cake started it all. Her father is a talented woodworker who crafted a large work table that sits in the center of the kitchen, and is one of McKinney’s favorite things in her new custom kitchen.
She received support from members of the community who provided the use of trailers and forklifts, physical labor and even an industrial mixer.
The new space on Fleet Street offers outdoor seating for breakfast or lunch. The dining area is spacious with giant storefront windows.
There is a play area called “The Room Under the Stairs” (Harry Potter, Dobbs and Alice inspired). The room has chalkboard walls and will soon have a play kitchen to keep children entertained long enough for parents to enjoy that second cup of coffee.
Featured goods include a variety of sandwiches (dubbed sammiches), New York-style bagels, fresh bread, pretzels, rolls, scones, muffins, cookies and cinnamon rolls.
McKinney uses fresh, local ingredients whenever possible, making pies and baked goods with locally-grown fruit in season.
She also makes custom dessert trays for special events.
First Rise Baking features local coffee company Coastal Café Roasters of Brookings, which offers locally roasted, organic coffee beans. Chetco Gold Honey is also available by the jar.
Artwork by local artisans is featured on the walls of the dining area.
The bakery is 7 a.m. to 2 p.m. Tuesday through Friday, and 8 a.m. to 2 p.m. Saturdays.
